In the 60’s, there was a well known advertising campaign for the egg marketing board, “with the strap line, go to work on an egg”. The idea was, an egg is a great way to start the day and strangely enough, more recently, this was proved to be correct by Cambridge University boffins, who have discovered that the protein in egg whites helps to burn calories and in doing so, keeps us awake and alert for longer. Sounds good to me.

This shot was taken for a new pub in Chelsea, “The Imperial”,  and the delicious food was created by a very talented young chef, Thomas Hope. We shot some fab food for them and I would thoroughly recommend going there if you get a chance.

The egg above is in fact a duck, not a chicken egg. Which has a richer flavour and apparently is great for baking due to the richer yolk/white content..
